So.. it's been a wild week, lots, and lots of drama at the restaurant where boy chef's - some downright silly and comical, some not so silly - ahem.
I started my new job this week.. I am really loving it - it's of course a little overwhelming at first bc I am learning a few new things and taking on a lot more financial responsibility than in my last position in the law office.. but it's such a great place to be, and I couldn't be more happy..
Theres a few other wild things going on, some good, some not so much..

Today was an absolutely wonderful day. We did brunch at the Skinny Rooster, which is always a yummy time. Then boy went to get some new frames since his old ones we taped together - tehe. After that we went to Best Buy for some new flicks and then sauntered thru Babies R' Us, testing out some gear and oo ahhing over the little clothes. (No we're not pregnant, but plan to be soon =)
After that we came out to let our little moose out and then headed down to the beach, which was very overcast with storms on the horizon, so we laid out on our towel to people watch, take pictures and flip thru our new Top Chef book.
It was a perfect day, so I'll share -

Busy nights, or just plain lazy nights make "good" food seem like a challenge and if you're not careful can turn into unwanted fried take out, etc.. so.. dishes that are simple to put together, relatively healthy and yummy of course are a welcomed dish on thoooose kind of nights.
Therefore I love making..and eating, tikka masala - it's frontward spicy flavors combined with buttery richness and soft, pillowy rice - SO..soooo good, to me. I think everyone makes their tikka masala a little different, just like everyone makes their curry different.
I was actually OUT of garam masala so I used a little curry powder, garlic, ginger, coriander, oregano, turmeric, red chili paste, allspice, s&p. I also used a pinch sugar to keep that harsh spice num num in your mouth at bay. I sometimes use yogurt, somtimes sour cream and tonight I used heavy whipping cream. I don't skewer my chicken either, I rough chop it, add some onions and fresh tomato's into mine. I also use jasmine rice, not basmati.
onions, chicken, tomatoes in the pot to sautee, with olive oil.
spices, spices, spices.
tomato sauce has been poured in, about 1 cup.
heavy whipping cream, about 1/4 cup. let all simmer for 15 min.

So.. I got out of bed around 12:.. haven't done much but eat so far.. This is the longest time I have ever had off between jobs, I left my job in NC on the 26th and I am starting my new job here next Monday.. I don't know what to do with myself, I feel like I have been running errands nonstop and there is only so many times you can vacuum..
I did come across a fabulous new recipe though. You know me, I love sandwiches, and of course the divine grilled cheese. I have always made them pretty plain, besides the few times I have gone out on a limb using different cheese or adding tomato, bacon, salami, etc. I have been reading Taste & Tells' blog for quite some time now, her blog is about one of the first ones I read that really got me into blogging and learning about the passion that I had for food and other photography. What I love about her blog is the simplicity.. while I don't mind scoping out the somewhat pretentious, way over my head in recipe and photo creation blogs, it's nice to sit down with a cup of coffee and mull over a warm, inviting blogs like hers.
While scrolling thru the other day I came across a grilled cheese on her site that I have not been able to get out of my head for days.. so today I decided to see what was all the comotion and put the damn thing together. The recipe is originally from Modern Classics I. It consists of cheddar cheese, sour cream, dijon mustard and s&p. I also added a smidge of honey mustard for tang. You of course want to modify the amount of ingredients to the size of bread and number of sandwiches you plan on making. I probably used about 1/4 cup of cheese and I could have used a couple more scrapes on the shreddar

Modern Classics I
Even though I ran a hundred errands, helped haul our new butcher table in, cleaned up, re-arranged the kitchen, I managed time to bake!
..I decided on originally yummy chocolate chip cookies, not so original. For me, I added dried strawberries and for the boy, since he has had a hard week, I picked up some skor bars on my adventures today to chop into my cookies..
The verdict : they both turned out really good, the cookies with toffee of course have a nice buttery crunch here and there and the strawberries were a fun touch but didnt bring the tartness I was hoping for..
I also managed to catch a KILLER sunset this evening.. I wish I would have had time to make it down to the beach for some serious photos but I was in the middle of 10 things and was happy to have caught it at all..

make sure to lightly flour your add ins so they dont clump together..

ok, we are back down to earth now. the dust has settled and we are brighter people with a bigger, brighter future ahead of us. 2 months, one crashed car, one new car, new diggs, one old job recovered, one new job secured, one relocation and a lot of adventure in between.
